- Heat the oven to 200°C.
Wash the plums and drain.
Remove stones and cut into chunky pieces.
- Put the plums in a shallow dish or baking sheet with sides, tip the sugar over and toss together, then shuffle it all so the plums are in a single layer.
- Cover with foil and roast for 15 minutes. Remove the foil, the sugar should have dissolved, so give everything a shake and roast for another 5 minutes. Don’t switch off the oven just yet, dear!
- Make sure the plums are tender and all syrupy, test with a sharp knife. They should be soft,
but not mushy.
- Heat the pancakes in oven, placing a sheet of foil between each one, for 10 minutes . Spoon the mixture over them before rolling up. Serve with scoops of vanilla ice cream. Easy-peasy and yummilicious!
